Project: curry cauliflower rice
EN Days are getting shorter and Winter is coming. For me, there's only one thing you can eat: curry! Curry is definitely on my top-3 comfort food. I love curry so much. So much that I've decided to share a recent curry dish of mine and the recipe of it with you guys. It's healthy and loaded with greens. I don't really have a special recipe category tab for a savoury hearty dish like this curry dish. But since this curry recipe is entirely vegan, I'll just place it under the vegan tab. Anyways! Zoveel dat ik mijn meest recente curry gerecht + recept met jullie wil delen vandaag. Het is zeer gezond en zit boordevol groentes in. Meestal post ik recepten van zoete baksels. Ik heb niet eens een categorie/tab voor hartige gerechten zoals deze curry gerecht. Sinds dit gerecht geheel vegan is, plaats ik het wel onder de vegan tab. Tot slot! Dit gerecht is super simpel om te maken. Je gooit in principe alles in een pan en klaar! |

Ingredients
100 gr/ 3.7 oz cauliflower rice
40 gr/ 1.4 oz kale
1 medium/ 60 gr/ 2.2 oz onion
1 or 2 garlic gloves
a few pieces of ginger
1 or 2/ 20-30 gr carrots
½ tbsp garam masala
½ tsp tumeric
½ tsp 5-spice
1 tbsp oil
1 tbsp honey
2x ¼ cup water (2x 60 ml)
salt and pepper
Recently I`ve discovered cauliflower rice in the supermarket. How convenient! I`ve seen broccoli rice too. Perhaps I`ll try the broccoli rice with this recipe!

The steps
For 1-2 person
1. Chop and dice onion, garlic and carrots in small pieces.
2. Sauté onion, garlic, carrot, ginger and the garam masala in a skillet or deep pan with lid on medium heat for 1-2 minute.
3. Add the first ¼ cup of water along with the honey. Place the lid on and cook for roughly 5 min on medium heat.
4. Add the kale and cook for 3 min. Add the last ¼ cup of water to it and let it shimmer for another 3 min.
5. Finally, add the cauliflower rice, tumeric and the 5-spice and cook for 1-2 min with lid on.
Add salt and pepper for flavour adjustment. Enjoy!
