Mango meringue pie (gluten,- and sugar free!)

EN It may be still winter and cold, but that doesn't stop me from baking pies that remind me of the sunshine and warm thoughts of the Summer. Behold the mango meringue pie! Mango is definitely one of my favourite summer fruit as well. And since I'm already familiar with the lemon meringue pie, I wanted to be experimental with frozen mango cubes. And guess what, frozen mango cubes make a great mango curd and filling for pies! And here today I'm happily sharing with you my mango meringue pie recipe. Gluten,- sugar-free possible! Vegan Chocolate Pie

EN Here's a recipe that is quite easy to make with ingredients that you probably have at home already and the result looks quite a showstopper on the table as well! I'm talking about a simple chocolate pie veganized. I enjoy chocolate from time to time but chocolate is not my favourite thing in the world honestly. There are rare periods in my life that demands for chocolate but most of the time I can perfectly live without it. That being said, I`ve enjoyed making this chocolate pie and eating a slice or two of it. Again it's really easy to make and the result looks dashing on every table! ingredients crust 60 gr almond or tigernut flour 80 gr rice flour 45 gr rolled oats 15 gr tapioca flour 1-2 tbsp. sugar ⅛ tsp. salt 85 gr small cut butter filling 125 gr soft butter 125 gr almond flour 80 gr sugar 1 egg 250 gr rhubarb 1 tbsp water 1 tbsp. honey Confession this is my first time having rhubarb. I have it once long long long time ago and I kind of forgot how it taste like. So I treat this rhubarb frangipane pie as my first and I`m looking forward in tasting it!
