Happy Monday and Halloween as well! Today I have brought 3 lunchbox ideas that are ideal for work and school! Plus they are very nutritious, filling and I am pretty sure your classmates or co-workers wants a bite or two as well!

The 3 lunchbox ideas are very simple and quick to make too. Please try them out someday! It's good to treat yourself with 'better' homemade lunches every now and then!

Vrolijk maandag en Halloween! Vandaag heb ik 3 lunchideeën voor jullie in petto die ideaal voor werk en school zijn. Ze zijn nog eens erg gezond, vullend en wellicht willen je klasgenoten en collega's ook wel een hapje nemen uit je lunch!

De 3 lunchideeën zijn ook nog eens simpel en snel te maken. Probeer ze eens uit! Af en toe mag je jezelf wat verwennen met het 'betere' zelfgemaakte lunches' nietwaar?

Mushy avocado chickpea sandwich
Ingredients
½ cup of (drained) chickpeas
2 tbsp. plain yogurt
half avocado
pepper & salt
handful rocket salad greens
4 slices of zucchini or cucumber or...
Place everything in a large bowl and combine and mush everything up with a kitchen pounder. It`s ok to have chunks init! Add salt and pepper to your likings. Then smear the avocado chickpea mixture on top of your bread and on top of that the greens and slices of zucchini or any other desired vegetables.

Asian avocado shrimp rice with sweet potato
Ingredients
Cooked rice
half avocado
cooked/pan stir fried shrimps
half cooked sweet potato
1 tbsp. sesame seeds

sauce
1 cap fishsauce
1 tbsp. soy sauce
1 tsp. honey
1 cap rice vinegar
Mix all sauce ingredients together. Place the cooked rice in your lunchbox. Cut avocado and sweet potato in cubes and place it on top of the rice and on top of that the cooked shrimps. Sprinkle the sesame seeds and pour the sauce on top.
I have seasoned the shrimps beforehand: a little bit salt, soy sauce, pepper, potato starch and vegetable oil and let is marinate for 10 minutes before pan frying. SO
good!
Minty spicy quinoa bowl
Ingredients
a cup cooked quinoa in herb/spice mixture (I have used pepper, salt, dried garlic and parsley)
cherry tomatoes
baby carrots
mint leaves
olive oil
So I have cooked the quinoa first in water with seasoning and herbs. Once it is cooked I place it in my lunchbox. The next thing is you`re going to chop up the cherry tomatoes and place that on top of the quinoa. I have sliced the carrots thinly on top but you can cut the carrots into cubes. And finally I have sprinkled some mint leaves on top with a little bit of olive oil.

  4. Yum! I really want to try the second one (: I live off campus now, so I need to bring my own lunchbox to school. It took awhile for me to get used to it at first, but I think I'm getting the hang of it! Currently I'm using Ikea containers to hold my food, but I think I want a better container with a clasp like yours -Audrey | Brunch at Audrey's
