Project: Vertical Cake

Hmm, I haven't baked a cake in a long long while! Time to get my cake-bake mojo back on and I've been looking through my cake bucketlist sorta to see which cakes I want to learn and to bake. One of the cakes are: vertical cakes.

I've seen this magical looking cake somewhere at Pinterest and Foodgawker before and it blew my mind! How on earth did people make the cake vertical?! Once I've learned the secret of this cake, it is basically one gigantic cake roll.

In my experience cake rolls/Swiss rolls are quite challenging and are not a piece of cake to make. My tip for you if you want to try out a vertical cake, try to make a simple cake roll/Swiss roll first! Mij vertical cake has a nice vanilla en matcha green tea flavor but you can of course pick any flavors of your choice!

Het is best een tijd geleden dat ik mijn eigen cake/taart van scratch uit de oven heb gehaald. Tijd om weer eens mijn bak-mojo aan te wakkeren. Wat ga ik deze keer maken? Een van de taarten die ik al heel lang wil maken is de 'verticale taart'.

Ik heb deze magische uitziende taart ooit ergens gezien op Pinterest en Foodgawker en ik vond het zo indrukwekkend! Hoe hebben deze mensen het voor elkaar gekregen? Nadat ik achter het geheim van deze techniek ben gekomen, komt het op neer dat de verticale taart eigenlijk een grote cake rol/Swiss rol is.

Uit eigen ervaring kan ik vertellen dat de cake rol niet gemakkelijk is om te maken. Als je deze verticale taart wil maken, probeer eerst de simpele versie cake rol/Swiss rol eerst! Mijn verticale taart heeft een fijne vanille en matcha groene thee smaak, probeer het eens uit!

Ingredients
cake
4 eggs seperated
3/4 cup of sugar
3/4 cake flour
½ tsp. baking powder
1 cap vanilla extract
2 tbsp. milk

frosting
125 gr butter (room temp.)
125 gr cream cheese
1½ cup of icing sugar
1½ tbsp. matcha green tea powder

The cake is ready when it easily come off the paper.
This part is scary, even for me - make sure you do it with caution and don`t rush it.

The Steps
cake
1. Preheat oven 180C degrees and line a square baking tin (30x30cm ±) with baking paper. Mix flour + baking powder together and set aside.
2. With a handmixer, beat egg whites with half of the sugar till stiff peaks.
3. In another bowl, beat the yolks, vanille extract and the rest of the sugar until it`s creamy and pale. Add the milk and continue beating
3. Add the flour mix and fold in until well combined
4. Add the egg white in steps: 1/3 a time and fold gently through the batter until it`s well combined.
5. Pour the batter on the prepared baking tin and bake for 12 min.
6. Meanwhile, prepare a wet kitchen/tea towel. The cake is ready when it feels springy or when the cake peels off easily from the baking paper.
7. While the cake is still warm drop the cake on top of the unfolded wet kitchen towel and carefully remove the baking paper. Roll the cake along with the towel and let the cake cool down completely in it`s rolled up state.

1. Beat butter and cream cheese in a bowl until it`s well combined and creamy.
2. Add the icing sugar and continue beating and lastly add in the matcha green tea powder and continue mixing until it`s well combined.

construct the cake
1. Carefully unroll the cake and cut 4 vertical stripes out of it, make sure that they are all have the same width!
2. Spread the prepared frosting on top of each of the stripes. Re-roll the cake by starting with the first stripe and roll it to the end. Continue rolling by place placing the first cake roll/stripe on top of the edge of another stripe. Repeat with the rest of the stripes.
3. Carefully place the cake on a serving plate with the cake side facing up. With the remaining frosting, spread the it on top and on the side of the cake. Let it chill in the fridge until ready to serve and to eat!

  5. Oooooo so beautiful! I recently had the chance to enjoy a delicious vertical cake we got for my grandmother's birthday. I wondered how the layers were assembled but didn't bother to even google it! Yours looks incredible! Matcha always hits the spot...and I haven't had any in a long time, would love a match cake and latte about now!
