Yum, it's strawberry season! Fresh strawberries sold with a cheaper price tag and tasting sweeter too and I'm taking advantage of it. In a form of a American style baked cheesecake with strawberry flavor!

Yum, het is aardbeien seizoen! Verse aardbeien die prettig betaalbaar zijn en zoeter smaken en daar ga ik mooi gebruik van maken. In de vorm van een Amerikaanse stijl gebakken cheesecake met aardbeiensmaak!
The Recipe
200gr cream cheese
2 eggs
50gr sugar
± 8-9 strawberries (pureed about 200ml)
1 tbsp. maïzena
butter for coating

Bottom crust
80gr digestive biscuits + 30gr melted butter

Topping
125ml/½ cup sour cream
1 tbsp honey (replaceable with icing sugar)

So happy to see that everything is holding up together so well! A tip: after baking, cool the cheesecake down in the fridge for a couple of hours to get the perfect setting.
The Steps
Preheat oven to 180ºC degrees. In a sandwich bag: crush the digestive biscuits into crumbs then add them to a bowl. Add the melted butter then combine till they stick together. Dress the bottom of a springform tin with it and set aside.

2. Beat cream cheese with the sugar to a soften structure. Add the eggs one by one and continue beating (low-medium speed) till everything is well combined.

3. Add the strawberry puree and gently fold into cream cheese mixture. Once everything is colored and combined, pour into the prepared baking tin and bake for 50 min.

4. Combine the topping ingredients together. Pour into the chilled down cheesecake and bake at 160ºC for 8-10 min.

  4. Strawberries are very expensive here because we do not produce any..all are imported and mostly sour. so nice to have sweet strawberries to make cheese cake.

  9. Sooo gorgeous! I've made normal cheese cakes with extra lemon juice for a good tangy flavor and I've loved them. I've never tried any other flavors like strawberry or blue berry but I think that would be next for me! Also I love how you've made the crumb base up around the sides! That prevents the cake from over baking and getting too firm around, I need to do that next time!
