Project: sugar free oatmeal muffins
The Recipe20 gr cake flour (2 tbsp.)40 ml coconut oil melted (other oil is ok too)1 tbsp. oatmeal + extra for topping1 egg + yolk1 tsp. baking powder1 pack of unsweetened applesauce (100 gr)1 tsp. honey + extra for garnishPinch of salt
ENMy recent baking has gone healthy! Yes, I’ve been experimenting baking by replacing sugar for other healthier substitute like: honey and mashed banana (like this recipe). Today’s recipe has no sugar added to and it’s been replaced with applesauce!Applesauce in these very simple oatmeal cupcakes/muffins!I hope you try them out, because not only they are a lot healthier they taste yum! Also the texture is very moist, soft and crumblier. NLMijn baksels zijn op gezonde toer de laatste tijd! Op gezonde toer doordat ik vooral bezig ben de suiker te vervangen voor andere gezonder alternatief, zoals: honing en geprakte banaan (zoals bij dit recept). Voor het recept van vandaag gebruik ik appelmoes!Appelmoes in deze makkelijke havermout cupcakes/muffins! Probeer ze uit want niet alleen zijn ze een stuk gezonder ze zijn ook lekker! Ook de textuur is lekker smeuïg, zacht en kruimelig.

To make it gluten free: replace cake flour and oatmeal with buckwheat flour
Out of the oven! Eet smakelijk!
Texture: very soft! Almost like cupcake soft.
Replace, try, taste and have fun
Oatmeal is nice! I've tried another batch with (deep frozen) fruit too and it gives a bit of sourness and sweetness too, also nice!
The Steps
- Pre-heat oven to 160°C. Melt the coconut oil by placing in a 100ºC degrees oven for a couple of minute.
- Beat the egg and the yolk and add in the apple sauce, the completely melted coconut oil and honey and combine it well together with a whisk.
- Combine the cake flour, oatmeal, salt + baking powder and add in the batter mixture. Lastly add the oatmeal on top.
- Pour in ovenproof cups or just in regular paper cups. Bake for about 25 minutes.
