Project: Dutch Egg Cake

The Recipe


 EN

2 eggs + yolk
130 gr sugar
250 gr flour (cake flour is ok too)
Pinch of salt
100 ml milk
1 tsp. baking powder 
 Optional

Grated coconut
Chocolate drops/scrapings

 2 eieren + eigeel
130 gr suiker
250 gr bloem (cake meel mag ook)
Mes puntje zout
100 ml melk
1 tl. bakpoeder 
 Optioneel

Geraspte kokos
Chocolade

EN One of my favourite comfort Dutch baked goods is ‘eierkoeken’ – and it literally means egg cake. Or Dutch egg cakes! Dutch egg cakes taste sweet, spongy and eggy but they do not have the same texture as the normal sponge cake. I think Dutch egg cakes are more firm. Since I’m a Dutchy too they are also my childhood food and today I have an easy recipe to share with you guys.

Een van mijn favoriete troostvoer/baksels zijn de goeie ouwe eierkoeken! Als kind at ik ze graag. Vooral de echte verse eierkoeken van de bakker zijn zo lekker!
 Ik als Nederlander en een lekkerbek heb ze paar weken terug een lading gebakken. Ze zijn verrassend makkelijk te maken: gewoon alles in een kom en blenden maar!

The Steps

  1. In a big bowl beat eggs and yolk with the sugar until foamy and creamy.
    In een grote schaal: klop de eieren en eigeel met de suiker lekker romig. 
  2. Then add the rest of the ingredients and beat until everything is well combined, smooth and thick!
    Voeg dan de rest van de ingrediënten toe en klop alles tot een glad, dik samenhangend beslag.  
  3. Let the batter rest for 10 min. in the fridge and meanwhile pre-heat oven to 180°C and line a baking tray with baking paper.
    Laat de beslag rusten in de koelkast voor circa 10 min. en ondertussen voor verwarm de oven op 180°C en bekleed een bakplaat met bakpapier. 
  4. Scoop (generous tablespoon) the batter on the baking tray. Cautions with the space: the Dutch egg cake expands! Bake the Dutch egg cakes for 10 min (I flipped the baking tray after 5 min.).
    Lepel (ongeveer eetlepel) het beslag en vorm een hoopje op de bakplaat. Zorg wel voor ruimte ertussen want de eierkoeken groeien tijdens het bakproces! Bak ze circa 10 min. Ik heb ze om de 5 min. omgedraaid voor beter gelijkmatig bakken.
