Project: sugarfree CUPcake

Lately I feel like baking ‘healthy’.
Especially after baking the French macarons here, because macarons are really
full of sugar. And today’s recipe will hopefully balance it out because it’s sugarfree!
All sweeten by bananas.
It’s sugarfree cupcake baked
in cups! There, that really put the name is justice right? To make it more
exciting in flavour, I have added blueberries. Deliciously sour!
I have also added chocolate
chips in my 2nd batch but this will no longer make the cupcake
sugarfree of course so be cautious!
I hope you guys try them
out! The texture is really fluffy. Kind of between a muffin and cupcake
texture.

Ik wilde even 'gezond' gaan
bakken. Vooral na het bakken van de Franse macarons hier, want macarons
zitten bomvol suiker. En het recept van vandaag zal dat hopelijk beetje balanceren,
want hij is namelijk suikervrij! 100% gezoet door bananen.
Het suikervrije recept:
cupcake gebakken in theecups! Dit geeft de naam toch extra gerechtigheid
nietwaar? Om de cakejes nog ietjes spannender te maken, heb ik bosbessen
toegevoegd. Lekker!
Voor de 2e partij
cakejes heb ik pure chocolade druppels toegevoegd, maar dit zal de cupcake
niet meer suikervrij maken, dus let op! Ik hoop dat jullie het uitproberen! De
textuur is erg zacht: tussen de muffin en cupcake textuur in.

2 ripe banana's
100 gr cake flour
1 tsp. baking powder
1 egg + yolk
1 cap of vanilla essence
pinch of salt
40 gr coconut oil (melted)
¼ cup of blueberries
* sugarfree, yields 6
No longer sugarfree when...
... when you add or replace it with chocolate drops! But still a great alternative and still low fat.
So fluffy texture
The steps
- Pre-heat oven to 160°C. Mush the banana's and blits them in a blender until liquid and smooth and no lumps!
- Beat the egg and the yolk and add in the banana mixture + the vanilla essence and the completely melted coconut oil and combine it well together with a whisk.
- Combine the cake flour + baking powder and add in the banana mixture. Lastly add the blueberries.
- Pour in ovenproof cups or just in regular paper cups. Bake for about 25 minutes.
Pfttt, if I'm having cupcakes, I'll gladly take it with sugar! But it's still nice to know that they're a healthy version out there :P Maybe I'll eat these for breakfast and then have the sugary ones for dessert. That's a balanced meal, right? ;P -Audrey | Brunch at Audrey's

I would prefer the sugarfree version..getting old, can't afford to take too many sweet stuff.
