Project: cupcake nor lavacake

I’ll be honest, I’m not really a huge chocolate person even I still love and enjoy eating chocolate, it is not my daily drug. Unlike tea and having good breakfast.

But last week I had a sudden craving for a good moist dark chocolate baked stuff and so I went checking and flipping through my cookbooks and came across an idea to make cupcake + lava cake, because why not!

I love cupcakes and even though I never had eaten a real lava cake before, I’m sure I’ll like it too so my recipe is a fun mix of both of them: rich, heavy and especially moist.

And what else makes this recipe so special? Well I’ve add a bit of instant coffee + salt to uplift that chocolate flavour!

Ik zal eerlijk zijn: ik ben niet echt een enorm chocolade persoon ook al geniet ik echt met volle teugen van een stuk chocolade - het is helaas niet mijn dagelijkse drug. In tegenstelling tot thee en het hebben van een goed ontbijt.

Maar vorige week had ik plots enorm zin in lekkere ongezonde kleffe pure chocolade baksels en dus was ik weer op baktoer en ging weer neuzen tussen de kookboeken door. En plots werd de cupcake + lavacake geboren!

Ik hou van cupcakes en hoewel ik nog nooit een echte lavacake gegeten heb, ik weet zeker dat het vast heerlijk smaakt! Dus mijn recept is een leuke mix van beiden: rijk, zwaar en bijzonder ‘moist’.

En wat maakt dit recept verder zo bijzonder? Nou! Ik voegde nog toe koffie + zout die de chocolade smaak nog verder versterken!

The recipe
200gr pure chocolate drops
280gr soft butter
5 eggs
150gr sugar
1 tsp. instant coffee + 2 tbsp. hot water
pinch of salt
* not vegan, gluten free, dairy free

I feel kind of guilty about taking this much butter.

Extremely dense and divine! I promise!
The steps

  1. Pre-heat oven to 160°C and get your paper/silicon cups ready.
  2. Heat up a pan with water on low heat until it boils. Place a fireproof bowl on top where you melt + stir the chocolate drops + butter in this fireproof bowl. CAUTION: make sure the bowl does not touch the water!
  3. Beat the egg and sugar in another bowl until pale and creamy. 
  4. Add the flour into the egg mixture and fold. 
  5. Add the chocolate mixture into the batter and fold.
  6. Scoop the batter into the prepared cups and bake for about 18 minutes in the oven. Once baked let them cool for 5 minutes.
