Project: Oven Baked Mexican Quinoa

A few days ago I went on healthy mode for a period and one of the healthy foods these days are quinoa! And thanks to Damn Delicious and her inspirational dishes I have turned quinoa into a nice nutritious bowl of comfort food. You guys should really check her foodblog because it is not only packed with recipes but also good looking pictures that will guarantee make you hungry!

I don’t know but I always get mixed up between quinoa and couscous. Yet I love eating them both! I think today’s recipe of mine would go well with couscous too. Or rice. Or spaghetti even!

I have turned this oven baked quinoa dish into a fun vegetarian Mexican dish by adding the following goodies such as sweet corn, peppers and cheese. And it’s really easy and surprisingly fast to make! Great for you students readers in a hurry or any other healthy foodies out there!

Ik ging even op gezond verstand een paar dagen geleden en ging dus lekker gezond eten met quinoa! Dankzij Damn Delicious en haar inspirerende gerechten heb ik quinoa veranderd in een lekker en voedzaam comfort food. Jullie moeten echt haar foodblog (wel Engels) checken, want er staan vol recepten en honger makende foto’s bij!

Ik weet niet waarom, maar ik haal quinoa en couscous vaak door elkaar. Misschien omdat ze op elkaar lijken en daarnaast eet ik ze beide graag. Het recept van vandaag zal vast ook goed smaken met couscous. Of rijst. Of spaghetti zelfs!

Ik heb deze oven gebakken quinoa omgetoverd tot een leuke vegetarisch Mexicaans gerecht door maïs, paprika en kaas toe te voegen. En het is echt gemakkelijk en verrassend snel te maken! Geweldig voor mijn studenten lezers en/of andere liefhebbers en fijnproevers!


the recipe
(for 1 serving)
  • 50 gr quinoa + 150 ml water
  • half medium onion
  • half paprika/pepper
  • half chili pepper
  • ¼ sweet corn and green peas (frozen is ok!)
  • 2 garlic gloves
  • 2 tbsp. of pasta sauce 
  • 1 tsp. (dried) parsley 
  • salt, paprika powder, cayenne pepper powder
  • 1 slice of cumin cheese

The steps
  • Rinse the quinoa and place them in a small pan with water and cook according packaging (should be ± 8 min). Set a side. 
  • Pre-heat oven to 190ºC (375ºF)and get an oven dish/casserole ready.
  • Chop & dice all the ingredients except the cheese and add in the pan with quinoa. For the garlic I have chopped 1 glove of garlic and minced the other one. Mix and combine everything well!
  • Spoon everything into the oven dish/casserole and place the slice of cheese on top. Feeling creative? Slice the cheese into bars and place them as checker style! Then bake in the oven for 8 minutes.

  4. Ooo looks so wholesome and tasty! I would love a quinoa salad right about now with lots of prawns on top! Loved that cross hatch cheese pattern you did, it's such a great touch!
