Project: Coconut Pancakes

Pancakes are happy foods!
My mum used to make them for us when we did good when we were kiddos. So whenever we get the chance to eat pancakes it was a real treat and a rewarding feeling.
Making pancakes is also my first time experiencing cooking in the kitchen! It was so important for me to master the art of pancake making.

But making pancakes is kind of child play anyways because it’s simply mixing ingredients together until smooth without having a hardcore measuring beforehand.
Today’s recipe is also child play with an extra ingredient twist: coconut!

Coconut, coconut, coconut and again coconut!

It seems that thé coconut is the holy grail in many fronts nowadays such as in beauty, food and health.
I’ve added coconut to my pancakes mainly because coconut has an amazing taste!

So my recipe is not vegan friendly, gluten free or low fat friendly. It’s pure indulgence and I hope you’ll join me and try it out!
   Oh wait it is dairy free actually.

Pannenkoeken zijn blijmakers.  
Mijn moeder bakte ze wanneer we iets goeds gedaan hebben toen we nog kinders waren. Dus elke keer dat we pannenkoeken aten was het een echte traktatie en beloning voor ons.
Pannenkoekjes maken is ook mijn eerste ervaring van koken in de keuken! Ik moest en zal de kunst van het pannenkoeken bakken beheersen!

Maar het maken van pannenkoeken is eigenlijk kinderspel, want het is eigenlijk gewoon de ingrediënten samen mixen tot een glad mengsel zonder de ingrediënten tot op de puntjes af te wegen vooraf.
Recept van vandaag is ook kinderspel met een extra ingrediënt twist: kokosnoot!

Kokosnoot, kokosnoot, kokosnoot en nog eens kokosnoot!

Tegenwoordig lijkt het erop dat dé kokosnoot in vele fronten domineren, zoals in beauty producten, voeding en gezondheid.
Ik heb kokosnoot toegevoegd aan mijn pannenkoekjes omdat ik simpelweg zot ben op kokossmaak.

Dus mijn recept is niet veganistisch vriendelijk, glutenvrij of zelfs calorie arm. Het is pure verwennerij en ik hoop dat je het uitprobeert. Hij is wel lactose vrij trouwens.

"The Recipe
(makes ≈ 15)
200 gr plain flour
200 ml coconut milk
30 gr coconut oil + extra for baking
3 eggs
4 tbsp. sugar
1 ts. cinnamon powder
½ ts. baking powder
20 gr shredded coconut + extra for garnish

 I couldn't help myself but to make a Nutella version of it. Here's the full recipe


"The Steps: 

  1. Mix everything in a bowl with a whisk/handmixer/fork until a smooth batter. 
  2. Heat a pan with coconut oil on medium heat. Scoop a generous 1 tablespoon of batter and pour it in the pan. Bake for 2 minutes on both side.
  3. Serve and garnish with butter and (pan fried) coconut shreds on top.

  3. Yum! I used to make pancakes with my brothers all the time. Just last week my brother randomly mentioned that we never make pancakes anymore. Maybe today I'll go get some ingredients and we can make some! I remember that there were a few times I used coconut oil, and the pancakes were so 香. idk why we didn't just use coconut oil every time :P -Audrey | Brunch at Audrey's

  10. Yum! The ingredients still seems healthier to me than what a "normal" pancake consists of, & looks mighty tasty too! That nutella version has me drooling. Haha.

  11. OMG I WANT COCONUT PANCAKES! I'm not a stickler when it comes to how dense or fluffy or spongey my pancake has to be, as long as its cooked and edible and tasty I'm all good! I would love to have some of the plain coconut ones with fried banana slices! Oh that sounds good!

  12. oh my gosh! looks amazingly delicious. i love pancakes too. they were alway a weekend thing for us and adding blueberries or chocolate chips were a special treat!
