Last Minute Eastery: 3-yolk Cross cupcakes

Happy Easter everyone! Here’s a quick last minute recipe that is a great addition to your Easter brunch: cross cupcakes!
That’s right inspired by the ‘cross buns’ that are traditionally eaten during the Easter period but instead of buns why not cupcakes!

And in this cupcake I’ve used the leftover yolks which the egg whites are used for making meringues. Oh look I have a recipe of that as well! Usually with leftover yolks I turn them into custard or crème brulee but I got sick of it and wanted to be innovative with yolks.
And thank goodness for Nigella and her 3-yolk sponge cake recipe! I basically used her recipe but instead of making a 1 round cake I just made cupcakes.

Vrolijk Pasen iedereen! Hier is een snelle last minute recept dat ook nog eens een leuke aanvulling is voor de paasbrunch: kruis cupcakes!
In andere gelovige landen zoals Engeland, Canada en Australia worden traditioneel iedere jaar met Pasen ‘cross buns’ gegeten. Puntjes/bolletjes met een kruis bovenop dus! In het recept van vandaag gaat het niet over broodjes maken maar cupcakes met een kruis van suikerglazuur. Ook lekker en gemakkelijk nietwaar?

Voor de cupcakes heb ik de overgebleven eidooiers gebruikt waarvan de eiwitten voor meringue gebruikt werden. En toevallig heb ik hier een recept van! Meestal maak ik met de overgebleven eidooiers een custard of een luxe crème brulee, maar ik ben er zó klaar mee en wil wat innovatiever zijn met dooiers.
En wat zou ik zonder moeten met Nigella en haar 3-dooier biscuitgebak recept! Ik heb dus haar recept tot op het puntje gevolgd maar in plaats van 1 ronde cake heb ik cupcakes gemaakt.

"The Recipe: 3 egg yolks, 2 tbsp. hot water½ cup fine sugar, ½ cup self raising flour, pinch of salt, 1 cap vanilla extract, 2 tbsp. milk, 2 tbsp. icing sugar + 1 tsp. lemon juice/water
Store them in a container or in a bag to keep the cupcakes moist. We avoid dry and hard cupcakes don't we?

I am so pleased with this golden yellow colored bottom!


"The steps:
(yields 9 cupcakes)
  1. Pre-heat oven to 180°C and line a muffin pan with paper cups. 
  2. In a large bowl: beat the yolks with 2 table spoon of hot water till creamy then add in the fine sugar gradually until the egg mixture is pale and thick. Add in the salt and vanilla extract.
  3. Then fold in the rest of the ingredient into the egg mixture and combine until everything is smooth. Scoop with 2 tablespoon of batter into the cups and bake the cupcakes for about 25 minute in the oven. Then let the cake cool down completely. 
  4. For the glaze mix the icing sugar and the lemon juice together in a bowl. Use a toothpick and 'draw' 2 lines on the cupcakes that forms a cross.
