What is the food code for Valentines day? Chocolate? Cream? Fresh fruit? And lots of heart and other sappy sprinkles? Those are probably the most seen and used magic key ingredients for this ‘cheesy’ holiday but for myself I’ve chosen for the ingredient: cheese (ha). Cream cheese to be exact to create the London Cheesecake!

Adapted from one of my favourite kitchen queen Nigella Lawson. She probably motivated me the most in baking and cooking because her cooking programs are laidback, easy and delicious and I love her personality a lot as well.

So the London Cheesecake. What’s the different than the popular NY cheesecake I was thinking when I was reading the recipe. Maybe the after baking the sour cream on top makes the different and I agree with Nigella says: "it does finish it off wonderfully!" because oh boy this cheesecake is super creamy and so delicious!
Along with the hand drawn hearts on top should make your Valentine all mellow with a happy stomach c:

Wat zijn de belangrijke ingrediënten voor een Valentijn’s snackje? Chocolade? Room? Vers fruit? En veel hart en andere zoetsappige eetbare versiersels? Dat zijn waarschijnlijk de meest gebruikte magische ingrediënten, maar voor mezelf heb ik gekozen voor kaas. Roomkaas om precies te zijn en voor het bakken van de ‘London Cheesecake’!

Recept komt van één van mijn favoriete keuken koningin Nigella Lawson. Zij heeft me waarschijnlijk het meest gemotiveerd om aan de slag te gaan in de keuken, want haar kookprogramma's zijn super relaxt, gemakkelijk en lekker en haar persoonlijkheid is om van te houden, echtwaar!

Dus, de London Cheesecake. Wat is er anders aan dan de populaire NY cheesecake dacht ik bij mijzelf toen ik het recept las. Misschien komt het door het nabakken van de zure room dat deze cheesecake anders is en smaakt maar ik ben wel met Nigella eens: “it does finish it off wonderfully!”. Heerlijk romig en smeuïg was hij!
En samen met de zelf gemaakte hartjes op de cheesecake moet je je Valentijn een glimlach en een tevreden maag stellen c:
"The Recipe:
200 gr cream cheese, 1 egg + 1 egg yolk, 55 gr (vanilla) sugar, 1 cap vanilla essence, 1 tsp. lemon juice, 50 gr digestive biscuits (I've used 4x Speculoos biscuits) + 20 melted butter  Topping:  125 ml sour cream, 2 tbsp. icing sugar, ½ tbsp. lemon juice + 2 tbsp. icing sugar + a few drop of red/pink food coloring

Since the glaze was runny I actually dabbed the glaze on top. 

Once you have created your little hearts, set aside (in the fridge) and let the liquid be absorbed into the sour cream topping. And once it's all absorbed the hearts should look like a water color effect!

Making the hearts: 

  1. Mix the half tablespoon + icing sugar + food coloring in a bowl with a spoon until smooth.
  2. Poor the mixture in a decoration pen or you can also use a toothpick to 'draw' the hearts on the cheesecake. Make sure the cheesecake is completely cooled down!
  3. Drop a small single drop on top of the cheesecake and form hearts by drawing it with a toothpick. Let the hearts set and absorb into the cheesecake.

  5. LOL for a second there I thought you wrote one CUP of vanilla essence and I had to do a double-take to realize you wrote one cap hahaha. Nigella Lawson is also one of my favorites - I love that she doesn't skimp on the goodness in the fatty ingredients ;)

  12. Oh my! This is soooo pretty! I've made cheese cake a few times, the new york style but I'd love to make it again but try some kind of decoration to make it prettier! Love your handiwork, it makes such a great difference in presentation!
