Project: Orange 'pepernoten' Bundt Cake (VEGAN)

Happy almost Sinterklaas holiday a.k.a. ‘Saint Nicolas’! Celebrating this holiday is a real Dutch thing that happens every year on 5 December which is tomorrow. It’s mainly a holiday for the kids where receiving presents, writing poems to each others and eating chocolate letters and ‘pepernoten’ is a must.

Therefore today’s baking post has to involve pepernoten (paper-nooten) in this orange bundt cake with pepernoten!

So, how do these pepernoten taste like? These little round crunchy biscuits has a slight gingerbread-ish taste which is pretty good (and addicting) stuff.

Also, this bundt cake is a vegan cake and it’s something that I’ve never done before. I ALWAYS add eggs into my bakings and to skip this step is kind of weird. There’s no butter in it either. Speaking of healthy right?

The outcome of the cake is expected to be different than my other cakes and its quite heavy and dense but yet still very flavoursome thanks to the orange. I hope you’ll try it out! Happy Sinterklaas!

Nog één nachtje slapen en dan is het zover: de jaarlijkse Sinterklaas feest, waarbij ieder jaar meestal met veel vrolijkheid begaat zoals cadeautjes geven en krijgen, gedichten schrijven aan elkaar en natuurlijk is het opsmikkelen van chocolade letters, marsepein in een laagje chocola en pepernoten onvermijdelijk.

Daarom is de pepernoot in deze bak kwestie post van vandaag een essentieel onderwerp want ik heb ze namelijk in deze sinasappel tulband cake met pepernoten verwerkt!

Ook deze tulband is een veganistisch cake en het is iets dat ik nog nooit eerder heb gedaan. Ik voeg 9 van de 10 keer eieren en andere zuivel producten in mijn baksels en om die nu weg te laten is toch een beetje raar en gemis. Er zit ook geen boter in. Dus dat maakt het ook gezonder nietwaar?

Het eindresultaat van deze tulband was naar verwachting anders dan mijn eerdere tulband want deze tulband is vrij zwaar en compact maar dat mocht de pret niet drukken want hij smaakte heerlijk naar sinasappel! En smaak wint altijd c: Ik hoop dat je het uitprobeert!

The Recipe:
½ cup sugar, 400 ml almond milk, juice + zest from 1 orange, 2 cups flour, 2 tsp. baking powder, 3 tbsp. vegetable oil, 20 gr. pepernoten + extra for garnish

It seems like I'm in a vegan mood lately. I've also made this vegan banana spread a while ago at here!
The Steps:
  1. Pre-heat oven to 180°C degrees. 
  2. Put the pepernoten (or digestive biscuits) in a sandwich bag and smash it until sand texture. Then grease a bundt cake pan with oil and on top of that coat it with the sand pepernoten. 
  3. In a mixing bowl mix: sugar, milk, juice, and oil until well combined
  4. Sift in the flour, baking powder and salt into the wet mixture and handwhisk.
  5. Pour the batter in the prepared pan and bake for 60 minutes.
  6. Decorate with icing (mix lemon juice and icing sugar), clementine and pepernoten!

  2. I visited one of my high school friends over Thanksgiving break to find that she recently switched from drinking "normal" milk to almond milk! Almond milk is quite delicious actually, maybe I'll make the switch too haha (it's supposed to be healthier too, right?). YOUR CAKE LOOKS SO DELICIOUS!
