Project: Forest fruit cake bar

I love working with fruit in
cakes and of course eating them. Lately I was craving for blueberry muffins
and I usually make them with (deepfrozen) blueberries because it’s super convenient
and yet still tasty as well. And a lot cheaper than buying fresh ones.
But I ran out of blueberries
and only had a bag of forest fruit left in the freezer. Which also has
blueberries in it along: raspberry, blackcurrant, red berries and black
berries.
Not feeling too much in
running to the store to buy blueberries (usually pricey) I have
decided to make: forest fruit bars!
And lets face it, nothing
taste better with your cup of tea or coffee with a freshly homemade treat!

Ik werk graag met fruit in
gebak maar het liefst het eten ervan, yum! En ik had laatst zo,n trek in bosbessen
muffins en ik maak ze meestal met (diepvries) bosbessen, want deze kun je
heel lang in de vriezer bewaren en blijven toch lekker!
Maar de bevroren bosbesjes
waren op en ik had slechts een zak met bosvruchten over in de vriezer. Die
overigens ook bos bessen hadden met daarnaast: frambozen, zwarte bessen, rode
bessen en bramen.
Omdat ik geen zin om naar
de winkel te rennen om bosbessen te kopen heb ik besloten om gebruik te maken
van deze bosvruchten: bosvruchten koeken!
En laten we eerlijk zijn,
niets smaakt beter dan een kopje thee of koffie met eigen vers gebakken
traktatie!

It does taste better with a cappuccino c:
- Pre-heat oven to 180°C degrees and grease + line a baking tin with baking paper.
- Beat butter and sugar until light and fluffy and beat the egg, yogurt and lemon juice into this butter mixture.
- Sieve the flour and baking powder and add it into the butter mixture.
- Pour the cake mixture into the baking tin. Divide the fruits on top of this cake mixture.
- Bake the cake for 40 minutes or until you see the cake is goldenbrown on top.
- Let the cake cool down completely in its baking tin.
- Icing: in the bowl goes the icing sugar + lemon juice and stir until you have a smooth texture.
- Sprinkle the icing randomly over the cake and let it set.
- Cut the cake in nice rectangle/squares and serve!

YUMMY! Your craving has totally churned out something delicious! I made blueberry banana chocolate chip muffins the other week and I never realized how nice blueberries are in pastries (despite loving berries!)
