Project: marble Japanese soufflé cheesecake

Last week, I was so craving
for a nice cheesecake and it made me realized that I haven’t made one in a
while!
I love cheesecake whether it’s
a dense NY cheesecake or a fluffy Japanese style cheesecake, I’ll eat them
all. But if I had to pick a side, I’m slightly heading over to team fluffy because
I’m a sucker for fluffy things and in today’s post I’ll be showing you guys a
recipe: ‘Marble Japanese Soufflé
cheesecake’!
I decided to finally use my
greentea powder into my bakery, so I was already planning a greentea flavoured
cheesecake. That, until I found this gorgeous looking marble cheesecake and that somewhere in the back of my mind, I had to challenge myself.
So I did.
And I gotta say I wasn’t
unhappy with the result: it was delicious!
And most important: very
fluffy!

Ik had laatst zo zin in een
foute cheesecake. Ik bak ze graag van ‘scratch’ en realiseerde me dat ik ze
al een tijdje niet heb gebakken.
Ik hou van alle soorten
cheesecake, of het nou een zware NY cheesecake is of een luchtige Japanse
stijl cheesecake, ik eet ze met veel plezier op. Maar als ik een kant moest
kiezen, ligt mijn voorkeur ietsjepietsie aan de luchtige variant, want ik ben
eenmaal een fan van luchtige ‘pluizige’ dingen. De recept vandaag is daarom
ook: 'Marble Japanse Soufflé cheesecake'!
Ik heb eindelijk gebruik
gemaakt van mijn groene thee poeder voor mijn baksels. Dus ik was al van plan
om een cheesecake met groene thee smaak te bakken. Totdat ik dit prachtig
uitziende marmeren cheesecake zag en ik spontaan geïnspireerd en uitgedaagd
werd.
En ik moet zeggen, ik ben
niet ontevreden met het resultaat: het was heerlijk!
En het belangrijkste: super
luchtig!
Ik hoop dat je dit recept

Da Recipe: 200gr cream cheese, 40 gr. cake flour, 16 gr. cornflour, 40 gr. butter, 120 gr. sugar, 80 ml. milk, 5 eggs (separated), 2 tablespoon greentea powder, 30 gr. melted chocolate, few drops of vanilla extract,
Green tea powder! Can be used in drinks of course! Bought via Candysan.com.
If you don't feel like making a marble cheesecake, just make a regular cheesecake! No problem! Just skip this step c:
I was so happy and relieved after cutting it, it's perrrfect.
Da Steps:
- Pre-heat oven to 160°C and line a 18 cm ø cake pan with baking paper. Sieve cake flour & corn flour together.
- In the saucepan: add butter, cream cheese and milk on medium heat until everything is melted, combined. Make sure you don't over boil it!
- Remove from heat. Add in all the 5 yolks into this cheese mixture and mix & combine well with a balloon whisk!
- Once that is all mixed well, fold the cake- and corn flour into the cheese mixture with a spatula. Until everything is combined well.
- In a new (tin) bowl: beat egg whites with the sugar until high peaks.
- Divide the cheese mixture in 3 clean bowls:
- bowl 1 = vanilla (add in vanilla extract)
- bow 2 = chocolate (add in the melted chocolate)
- bow 3 = greentea (add in the greentea powder) - Divide the beaten egg whites into these 3 bowls and fold with a spatula until everything is combined.
- Pour the 3 colorful mixture into your prepared cake pan and run/stir with a spoon/spatula randomly to create this marble effect. Caution: don't overdo it or you will lose the marble effect..
Drop the cake pan a few times lightly on the table to release some of the bubbles... - Place the cake pan in another cake tin and pour boiled water to create an 'au bain marie'
- Place the cake in the oven in the lowest rack and bake for 1 hour and 25 - 30 minutes in the oven, or until the top is golden brown.
- After baking, let the cheesecake cool down completely in the cake pan. Remove cake pan and baking paper and serve.

Wowwww that looks amazing!! I love cheesecake too. This texture is much different from the cheesecake I'm used to seeing though. It does reflect more of a marbled cake than a cheesecake, but either way, I'm sure it tastes delicious. I feel like I've stared at your gif for like 3 minutes now. hahaha

Cheesecakes mislukken op een of andere manier meestal bij mij maar ga deze denk ik toch maar eens proberen deze vakantie, ziet er lekker uit namelijk :)
