Project: Japanese dark pearl chiffon & rosewater icing

EN

A week ago was Fathers Day! I hope you all treated the old man warmly c: As you might know, I baked papa a cake! We also went out for a nice meal at a restaurant, like we always do with these kind of holidays.

Personally, I think making food to someone is a great gesture. I like to spoil people with food c: This Japanese dark pearl chiffon cake with rosewater creamcheese icing sure spoiled my papa! I don’t know why it’s Japanese nor it’s a pearl chiffon cake, but it taste like chocolate cake.

Anyway, care out to try it?

NL

Ben een ‘people pleasure’.

Da Recipe:: 3 eggs (separated), 35 gr. neutral oil, 50 ml milk, 80 gr. melted dark chocolate, 15 gr. cacao powder, 35 gr. cake flour, ¼ tsp. baking powder, 3 tbsp. sugar, pinch of salt, 1 tsp. instant coffee
rosewater icing: 100 gr. cream cheese (room temp.), 125 gr. icing sugar, 1 tbsp. rose water, 1 drop pink food coloring (optional)
A bit of coffee involved, this actually increase the chocolate flavor c:

You can melt chocolate with a microwave but for some reason I always burn them :c
Melting them on pan/bowl of hot water is 100% success.

 Looks like a donut!

Da Steps:
  1. Pre-heat oven to 160°C. Solve the 1 tsp. of instant coffee in a cup with the 50 ml milk.
  2. In a bowl goes the egg yolks, beat it lightly for a moment and drizzle in the oil while whisking.
  3. Add in the coffee-milk mixture in the yolks. Mix. Add in the melted dark chocolate. Mix.
  4. Add in the (sieved) stuff: cake flour, baking powder, cacao powder and salt into this egg mixture and mix!
  5. In a new (tin) bowl: beat the eggwhites until stiff peaks with the 3 tbsp. sugar.
  6. Once the eggwhites reached stiff peaks, scoop with a spatula the eggwhites into the chocolate/eggmixture and fold.
  7. Pour the chocolate mixture now in a size 8 pan, and drop the pan for a 3 times to release the airbubbles in this chocolate mixture.
  8. Bake for 45 min. in the oven. I have placed mine in the center rack.
  9. To check if the cake is baked well: poke the cake with a toothpick, and if the toothpick comes out clean (no wet dough) it's ready! Immediately place the cake pan upside down on a rack and let it cool down completely.
  10. Now a tricky part, removing the cake from the pan. Use a knife a run it around on the inside of the pan + center core for a few time. Give it a few whacks perhaps until it come lose.
  11. Mix all the ingredients for the icing until smooth. Set aside in the fridge to set for 15 min.
  12. Coat the cake generously with the icing. Also on the inside of the core!
Good luck!
