Project: homemade Fries and Mayoooo

So excited because I've never made fries before and lately I was craving for French fries a lot as I can’t remember what my last time I had them. After reading a few recipes here and there I decided to give it a go and chosen a healthier option: baked seasoned French fries with skin!  

I was also feeling challenged and adventurous enough to make my own mayonnaise because what are fries without sauce right? Even though mayo is not my favourite sauce, I still want to understand the base of making good sauces.

And never thought making homemade French fries would be this easy. And I never thought making mayonnaise would lose my right arm.

Vandaag laat ik zien hoe je Franse frietjes (met huid) uit de oven en mayonaise moet maken! Ik had spontaan trek in friet en heb nog nooit friet gemaakt en het stond al vrij lang op mijn ‘bucketlist’. Dus ik dacht ‘gaan met die banaan’!

En wat is friet zonder mayonaise? Hoewel mayonaise niet mijn favoriete saus is, wil ik deze heel graag maken en deze beheersen. Ik voelde me nogal uitgedaagd na het zien van vele kookprogramma’s op tv!

Wat ik heb geleerd: friet maken is een ei. Mayonaise daarin tegen ook maar je verliest wel je arm. Wil je weten waarom?

 Ik zeg probeer dit receptje uit!
Da recipe  
 mayonnaise: 1 egg yolk, ¼ cup vegetable oil (sunflower oil), ½ tsp. mustard, ½ tsp vinegar, few drops of lemon juice, 1 tsp. fine sugar, a good pinch of salt & pepper 
 mayonnaise: 2 medium potatoes, 2 tbsp. of oil, pinch of salt & pepper, 1 tbsp. of parsley (mine was dried), 1 tbsp. of rosemary (also dried)

My right arm was really soar after all the whisking but it sure was a work out! 

Just using my hands because I'm a messy cook...
And I didn't want to wash up. 

 Ready for the oven! 

First of all, after it came out of the oven it smells so so góóód! Like ugh. One of the best home lunches ever.

 Mayonnaise: 
  1. Whisk egg yolk with mustard (I've used the Dutch 'Zaanse' mustard).
  2. Adding the oil: careful! Just let a few drops first and slowly and keep on whisking the egg. After a while the egg will turn a bit pale and thickens up. Keep adding oil in small amount to the egg! You don't want the egg to split. 
  3. After the base has thicken up, add the seasoning: salt, pepper, vinegar, lemon juice and sugar. Combine well! 
  4. Now your mayo is done! You might want to rest in the fridge until you use it. 

Seasoned French fries:
  1. Pre-heat oven to 230°C. Get a baking tray ready and coat it with foil. 
  2. Remove dirt and wash the potatoes thoroughly. If you want to peel of the skin feel free to do it. 
  3. Cut the potatoes in any desired shapes/slices/thickness. 
  4. Put them into a bowl and add in the 2 tbsp. oil, salt, pepper, rosemary and parsley. Combine them well!
  5. Place the fries on the baking tray, next to each other. 
  6. Bake it for 20 minutes. 
  7. Serve it and enjoy!

  5. What a cute little holder for your fries! I should just try this; they look great. Last week I tried a recipe using swede to make fries (supposed to be a non-carb alternative to potato) but they didn't even turn out crispy on the outside, fluffy on the inside like they were supposed to, just tasted like roasted veg! Should have never deviated from my precious potatoes -_-

  7. Ohh yum! So Dutch, haha. I've never tried making mayonnaise myself before, it looks like hard work. What I like to do is mix a bit of roasted garlic into my mayonnaise, it tastes really good.

  11. Mmmmmmm...... Het ziet er zo lekker uit! Ik ben wel benieuwd wat je nog met het eiwit hebt gedaan, daar kun je nog lekkere toetjes van maken zoals merengueschuim :) xx

    Ik heb de afgelopen week zoete aardappelfrietjes lopen bakken, maar die waren zeker niet zo goed als die van jou!
    En de mayo ziet er inderdaad uitdagend uit; ik denk dat ik het maar gewoon bij de super koop :p

I have actually never tried the baked version, we usually fry them and then use all the absorbing paper in the world to dry them to keep them healthier :) I'm terrible at mayo, you are really brave to do it with the whip (poor arm)! I have only tried the hand mixer but I usually end up curdling it :S I need practice ;)
