Project: Chocolate layer cake with spongefingers and fruit

EN

As promised: a cake recipe for you.
And I think this one has to be the prettiest one I have made so far! So yeah, I was a pretty sad to cut it, this chocolate layer cake with fruit and spongefingers because it looked so pretty.

Valentines Day is coming to town and maybe you want to surprise your Valentine with a homemade cake like this one! Homemade ones are the best because they are made with love, ya know.

Anyway, I’ve made this cake of course for recipe share and for my family. My family usually takes 1 slice as they are not so great cake lover but this time they have eaten all of the cake!
NL

cake: 85 gr. butter (room temp.), 3 tbsp. (cane) sugar, 1 large egg, 1 tbsp. honey, 85 gr. selfraising flour, 2 tbsp. cacao, pinch of salt, 1 tbsp. water
icing: 250 ml. cream, 2 tbsp. sugar
 decorations: any desired fruit, spongefingers

Looks like chocolate icecream, lol.

The cake was a bit dry :c so I suggest you to add a tablespoon of water/milk to the batter before baking it.

I was a bit sad to cut the cake because it looked so pretty in ribbon ;c

Da Steps:

  1. Preheat oven to 180° C and line a ø 10-13 cake tin.
  2. Beat the butter with the sugar until its creamy and fluffy. This is important because the next step is adding egg and you don't want the egg split. So add the egg and the tbsp. honey and mix!
  3. Sift the flour + cacao and add it to your butter egg mixture and fold it.
  4. Add a tablespoon water or milk and combine well.
  5. Spoon the batter in the cake tin and bake the cake for 35 min.
  6. Repeat the steps 1-5 for the 2nd cake!

  7. Beat the cream with the 2 tbsp. sugar in a clean bowl until stiff. Set aside in the fridge

  8. Cool down the cake for 5 min. in the mold and then on cooling rack.
  9. Trim the cake with a knife to desired length like I did in the picture.
  10. Get the cream from the fridge and get starting decorating your cake with fruit and spongecake! And its ready to serve.
Good luck!
