Food in Process: honeynut cake

Since autumn is all over the place, I wanted to bake a cake that resembles autumn. This means lots of nuts! And honey to replace some of the badbad sugar and to cooperate with the nutflavour.

So. I followed this recipe from a cookbook and the cake here is flat. And as you can see mine is the complete opposite. It’s a mountain! A big question mark popped out wondering what I did wrong. But nevertheless, I kind of like how it turned out, giving a nice funky look and make the nuts shine even more and the texture was moist and firm. P.S this taste even better with a cup of tea/coffee!

De herfst. De herfst heeft zowel zijn leuke (bladeren!) en mindere leuke kanten (kou..). Dit heeft ook invloed op mijn baksels want dan denk ik aan 'comfort food', chai tea latte, die verse wafel/oliebol van de markt…… ik heb besloten om een cake te maken met heel veel noten erin!

Dus. Ik volgde dit recept van een kookboek en de cake uit dit kookboek is plat, terwijl de mijne een berg probeert te imiteren. Vreemd. Maarrrr dat mocht de honger niet killen, want hij rook héérlijk en de noten vielen hierdoor beter op en hij was smeuïg and stevig! P.S. hij smaakt nog beter met een kop thee/koffie!

Da Recipe: 50 gram butter, 2 tbsp. sugar, 3 tbsp. honey + extra for coating, few drops of lemon juice, 1 egg whisked, 80 gram selfraising flour, handful of your desired nuts!


Da steps:
1. Pre-heat oven 180°C . Grease and line a caketin (I've used size 10, so very small..) Sieve the flours together.
2. In the sauce pan goes the butter, sugar, honey and lemon juice. Let it melt on low heat and make sure not to let it boil. 
3. Take it the pan from the heat and whisk the egg through the mixture. 
4. Shift the flour and mix it with a spatula. 
5. Pour it in your cake tin and sprinkle the nuts on top. 
6. Bake the cake 40 minutes. It should look firm and goldenbrown. Let it cool in the cake tin for 15 minutes. Unmold and let it cool completely on a tray. 
7. Coat the cake with some honey on top and you are ready to serve!
