Food In Process: breadcrown with fruit
Somewhere in July I've made this breadcrown with
dried peel fruit and didn't care that it turned to be
a Christmas bread. Because bread is my life force.
And it tasted pretty nice and healthy!

Da recipe: 40 gram dried cranberries, 10 gram assorted dried peel fruit, 30 gram melted butter, 5 gram yeast, a pinch of salt, 50 gram brown sugar, 250 gram plain flour, 1 tbsp. cinnamon + nutmeg, 100 ml water (room temperature), 1 egg
You can use the microwave to melt butter but its healthier to melt it in the sun.

Da steps:
1. Grease a round cake pan with butter/oil.
2. Sieve the flour, yeast, salt.
3. Mix the dried peel fruit, cranberries together with the sugar and 1 tbsp. melted butter. Set aside.
4. Add the water to the flour mixture and knead until smooth and elastic. Add the melted butter and knead until smooth, elastic and not sticky.
5. Place the dough in a (greased) bowl and cover it with cling wrap. Let it double it size for around 1 hour.
6. After 1 hour of doubling, release the air inside the dough and roll it out by using a roller pin (see gif. image).
7. Spread and divide the dried peel fruit mixture over the dough and roll it up carefully.
8. Cut with a serrated knife the roll into 8 proportion. Place them in the greased pan and let it rest for another 1 hour.
9. Pre-heat oven to 180oC.
10. Whisk the egg and brush it on top of the breadcrown. This will create a nice brown color on top. 11. Bake the breadcrown for 35 minutes until the top is golden brown.

it looks so cute! i'm too afraid to try fried fruit though, i have some childhood traumas hahaha. i'd love to try to make a cinnamon roll cake that would look like yours! xx

ReplyDeleteI used to eat an Italian bread very similar to that every Christmas. My dad's patient would fly to Italy and bring us back a loaf every year.
