Food in Process: white chocolate biscuits

A while ago, I've made these for my friend: white chocolate biscuits with grated 
coconut on top. Her favorite type of chocolate is indeed the white chocolate.
While mine is the dark chocolate, so much cacao flavor and a lot healthier than
the white fatty version.

Now, I've spend 30 minutes on watching dessert recipe at Youtube, and
one of them is this 'Instagram chocolate mousse cake' that will not only put a
smile on children faces, as well on the adults! But this cake is way to intimated
for me: it takes 2 days, lots of measuring + 2 type of chocolate mousses.
And I don't like to fail haha.

Anyway I'm designing a new bloglayout and can't wait to be finished!
What I have noticed that alot of blogs have this 'scrollwithyou menubar'.
I want that too!! So I'm coding and re-writing the html template.
Not my favorite kind of thing to do because one tiny mistake (misplacing
a comma for example) and your entire layout is ruined. Grr.

So whats your favorite type of chocolate? (mine: dark chocolate & nuts)

Da recipe:1 egg, 100 gr sugar ( ½cup ), 65 gr melted butter ( ⅓cup ), pinch of salt, 165 gr plain flour ( 2x ⅓cup ), half tsp. baking powder, 100 gr white chocolate, 20 gr grated coconut, 1 tbsp. vanilla extract   

Melt butter. 


Yeah I know, I really should get a decent piping bag because this garnish pen is really not suitable for this job...

And this is what you'll get, nothing but a ordinary round biscuit really. 


At the end I asked myself why on earth did I pipe these out, when its all coated in chocolate? Who cares because it taste good!


Da Steps:
  1. Whisk the egg, stir in the melted butter, vanilla extract and the salt. 
  2. Strain all the dry ingredients (flour, baking powder) and combine these with the egg mixture.
  3. Cover the bowl and put it in the fridge for 30 minutes.
  4. Pre-heat oven 200°C (392°F). 
  5. Scoop the dough mixture into a piping bag and pipe fun shapes on a prepared baking tin with parchment paper. 
  6. Bake 10 minutes.
  7. Let the cookies cool off on a grid.
  8. Melt the white chocolate in the bowl, under a pan of hot water. Careful: don't let the bowl touches the water. 
  9. Use a knife and spread the melted white chocolate on top of the cookies and sprinkle some coconut on top. Let the white chocolate set and you're done!

  17. Those are such cute cookies! Dark chocolate is my favorite too because I prefer the slightly bitter flavor rather than the overly sweet white chocolate. That's a shame that the swirl cookie ended up looking like a normal one. .__.

    Thanks so much for stopping by. Yes I use an electronic handmixer to beat egg first at very high speed then add the rest of ingredients (except pecan which I add last and just use a spatula to fold them in).
