Food in Process: Carrot cake

Say "hurray" for carrot cake! This spicy and
moist cake is truly one of my favorite indulgences.
If you re-think about it, carrot cakes are pretty healthy
as well. Well if you leave out the thick layer of
creamcheese of course.

This is my first carrot cake in muffin shape and they
tasted not bad! I love how rich and moist the dough were
with the crunchy nuts! For the next time I'm going to
add a little bit more sugar and I think to add coconut
to it as well! Mhmm, I can't wait!


Da Recipe: 135 gram self-raising flour, 1/2 tsp 
baking powder, 150gr nuts (walnuts, almonds, hazlenuts etc.), 50gr butter, 1 egg, 1 tbsp condensed milk
150gr carrot, 1 1/2 tbsp cinnamon powder, 1 1/2 nutmeg, 30 gr brown sugar, 90gr natural yogurt, pinch of salt

100gr creamcheese, 30gr icing sugar, a few drops of lemon juice


 Ah man, this almond nut was a tough cookie to crack! My and my chickenbones only have cracked open 2 of them. 


Da Steps: 

1. Crack nuts and grate the carrots. Line the muffin tin with paper cups and pre-heat oven to 200º C.

2. Sift the flour, baking powder, cinnamon powder, nutmeg & salt and mix well. 
3. Rub the butter into the flour mixture and create a really 'crumble' effect. 
4. Add the sugar.
5. In a new bowl, whisk the egg lightly with the condensed milk and pour into the flour mixture.
6. Add the nuts, carrots, yogurt and mix well!
7. Spoon it in the cups for 3/4 full. 
8. Bake for 25 minutes until golden brown.

9. Mix creamcheese with icing sugar and lemon juice. 
10. Decorate the muffin on top with the creamcheese mixture.
